* CHARACTERISTICS AND USES:
Carrageenan is a product obtained by separating red seaweed with water or dilute lye. Carrageenan does not have a fixed chemical formula due to its dependence on the hexoses. Carrageenan is a thickener, emulsifier, gelling agent, and stabilizer in food.
– Soluble in water at a temperature of about 80 ° C to form a viscous solution or an opalescent solution with fluidity.
– Insoluble in ethanol.
Disperse more readily in water if initially moistened with alcohol, glycerol, or a saturated solution of glucose and sucrose in water.
